Winter is here and that means short days and cold nights. This is one of the hardest times of year for me to stay on track with my healthy lifestyle. The winter seasons gets me in a rut from weeks of holiday activities, not feeling great about myself due to eating more bad food and wanting to stay in the comfort of my warm house.
In order to try and get back on track, I start with my eating and cut out the junk. During the winter I like to make homemade turkey chili because it is a homey food, perfect for the cold winter nights and CAN be made healthy! Here is my recipe...
- white onion
- chopped garlic
- extra virgin olive oil
- 1 package 93% lean 3% fat ground turkey
- 1 can red kidney beans
- 1 can crushed tomatoes
- 1 red pepper
- 1/2 jalapeno
- crushed red pepper
- chili powder
- salt and pepper
Directions: 1. Start by caramelizing half a chopped white onion, a couple cloves of chopped garlic, and mushrooms in a couple of tablespoons of extra virgin olive oil.
2. Then add a package of 93% lean 3% fat ground turkey and saute until cooked.
3. Once cooked, add in 1 can of red kidney beans, a can of crushed tomatoes, I chopped red pepper, 1/2 jalapeno, crushed red pepper, and chili powder.
4. Bring it all to a boil and then cover and let it simmer for ten minutes. Season to taste. Enjoy!
