Anyone who knows me knows that I LOVE steak. Whether I'm having breakfast or dinner, whether I'm cooking at home or going out to eat...steak is always my go to. I usually go with a tenderloin cut (filet) but they're all winners. Loaded with protein, healthy fats, vitamins, minerals, iron, AND it's so delicious!! Pair that with sautéed/steamed broccoli and I'm a happy man.
Here's how I do steak:
-Have steak out of the fridge for at least 10 minutes, ready to cook. Smack on some salt and pepper.
-Preheat convection oven to 450. High heat CAST IRON skillet on stove top. Let that get real hot!
-Put the skillet on medium heat. Add some extra virgin olive oil. Toss the steak on.
-Heat each side for 2.5 minutes
-Once each side has been heated 2.5 minutes, put the skillet in the oven as is. Top shelf.
-Heat for 6-8 minutes (depending on how you like it cooked and how thick your steak is.)
-My steak is usually 1.5 inches thick and I like it medium rare, closer to the rare side. So I go with 6 minutes in the oven.
